Like all Nouveau styles, the fresher the better – the grapes are picked at optimum ripeness, crushed and hand-plunged on skins for seven days, then cold pressed to preserve the bright aromatics and colour. Only free run juice is racked into stainless steel where the magic of spontaneous malolactic fermentation occurs and SHAZAM! the wine is ready to be bottled!
The result is spectacular – vibrant bright purple in colour, the wine itself is like crushing fresh cherries in your hands and drinking the juice!
